The Inspiration

Have you ever watched someone try to eat a long, dry, crumbly biscotti cookie? Exactly!  

After watching friends break up long biscotti logs into pieces, forming an easier shape to enjoy, the idea for The Bites was born!

We’ve reinvented the traditional biscotti cookie into a round delectably delicious Bite!  In true Italian fashion, we bake our Bites not once but twice, creating the perfect texture biscotti into an easy, modern, fun and compulsively poppable Bite!

What happened next?

I worked in fashion my entire life while baking on the side for relaxation and fun. After starting a family and settling into Fairfield, Ct, I decided to continue my love of baking and start a cookie company. As a graduate of The Fashion Instutue of Technology, I pivoted my years of luxury and manufacturing experience towards the business of baking. When global pandemic circumstances beyond my control led me to explore new ventures, as fate would have it, or as I like to say “the Singer spirits” stepped in… I purchased The Bites Company in 2020. Not wanting just anyone to take over the business, it was perfect timing, a dedication to clean ingredients and the love of baking. Since then I’ve grown The Bites Company to National Distribution and we’re not stopping!

Present Day!

Founded in 2014, The Bites Company biscotti Bites are handmade in our own facility located in Bridgeport, Connecticut. Our bakery is located inside the original building where sewing machines were made by the Wheeler & Wilson sewing machine company circa 1856. Later purchased by Singer Sewing Machines in 1905, Singer employed 1,500 workers in this building until its closure in 1960. Today we employ local women from Bridgeport who manufacture and package over 150,000 Bites per week!

This is my grandmothers Sewhandy Hand Crank Singer Sewing Machine circa 1926 which sits on display at our factory.

What inspires us now?

We are inspired every day by our loyal customers, our retailers and our distribution partners. We are committed to using all natural ingredients, organic + non GMO, keeping our recipes clean with fewer ingredients!  We continue to support as many local suppliers to the Northeast as possible.  We are always available via phone or email &  please keep sending in your comments, pictures and reviews but most of all sharing with your family & friends!
